Orange Fleshed Sweet Potato Pasta
Background:
Vitamin A deficiency is a common problem in both rural and urban India. Surveys estimated that overall prevalence of xerophthalmia among children 1.7%, and approximately 0.8% of all children in India. Sweet potato is produced mainly as a subsistence crop and there is a need to add value to this crop to provide assured returns to the farmer.
Technology Details:
Orange-fleshed sweet potato is rich in β Carotene, a precursor of Vitamin A. Pasta made from Orange Fleshed sweet potato has a high swelling index on cooking, very high lysine content (compared to wheat pasta), and high biological value coupled with a high content of resistant (undigested) starch. High carotene content can help to combat Vitamin A deficiency.
