However, India and other countries having a significant number of vegetarian’s population called “vegan food in European countries, the sausages are made up of non-meat based can cater the needs/demands of the vegetarians. On the other hand, paneer forms an important and rich source of protein for vegetarian population and is widely used in various culinary dishes and consumed as an excellent substitute to meat in Indian cuisine. There was no report for sausage comprising coagulated milk paneer with vegetables as the components are highly perishable, with shorter shelf life. The present invention involves the method of preparation of Coagulated Milk (Paneer) Sausage comprising of any of the suitably selected vegetables, binder and other ingredients at appropriate ratio. Advantageously the present sausage containing no meat can be an excellent source of protein for vegetarian as well as non-vegetarian consumer worldwide.
