IIMR has developed a process for manufacture of instant millet idli mix with millet formulation, where instantly millet idli can be made without waiting for fermentation. This is made with pre-treated millet fine semolina, ground pulses and food grade additives. This can be instantly made into steamed idli and served with a spiced vegetable filling or chutney.
