Dye-based Quality/freshness Indicator (QI) to monitor quality of meat and meat products during supply chain

Background:
At present Indian meat industry is struggling in the meat business due to insufficient cold storage facilities which leads us to the country where the food spoilage rate is highest in the world. This inefficiency of supply chain will contribute to significant loss in quality of food especially meat. This deterioration of quality in supply chain will create great economic loss to producers and will harm the faith of consumers on producers. As far as perishable commodities like meat and meat-based foods are concerned, most crucial factor is the control of temperature throughout supply chain, any fluctuation in temperature at any point during transport and subsequent storage, will lead to decreased acceptance of the products. Therefore, an efficient system that can monitor the changes in quality throughout supply chain is necessary. Therefore, dye-based quality/freshness indicator for monitoring quality of meat during supply chain is basic need of the meat processing industries:
Technology Details:
Dye based Quality/freshness Indicator is a simple device. It can be used as sensitive to volatile amine compounds generated during storage of meat and meat products due to microbial spoilage. The dyes, A and B based Quality indicator when set inside the meat packages a visible color change occurred from initial dark pink to final yellow and initial purple to final yellow respectively and can be observed when there is reaction of volatile amines generated from meat and products with indicator.
